Cinnamon Swirl Pancakes

There's nothing like piping hot pancakes fresh off the griddle... except maybe cinnamon rolls fresh from the oven... but who has time for that? 
 
Use this recipe to cheat and get delicious flavors of cinnamon rolls with the convenience of pancakes - here's how:
 
Cinnamon Swirl Pancakes
 
Swirl Ingredients:
1 stick butter, melted
1 cup brown sugar
1 tablespoon all-purpose flour
2 tablespoons ground cinnamon
2 teaspoons vanilla
Dash of milk
 
Pancake Ingredients:
1 cup whole wheat flour
1 cup all-purpose flour
1/3 cup white sugar
2 eggs
2-1/2 cups milk
2-1/2 teaspoons baking powder
Instructions:
To make the cinnamon swirl, cream together the butter and brown sugar.  Add in the flour, cinnamon and vanilla, then add a dash of milk, just enough to make it like a paste, not drippy.  Scrape down the sides with a spatula and pour it into a small ziplock sandwich bag.  Set aside while you make the pancake batter.
 
Preheat your griddle, I like to cook my pancakes at about 375-degrees.  In a medium bowl, combine the dry ingredients with a whisk, then mix in the wet ingredients until combined.  As always, you don't want to overmix your pancake batter.
 
Grease the griddle, and pour about a quarter of a cup of pancake batter onto the griddle.  Snip off a small corner of your sandwich bag and working quickly, carefully pipe the cinnamon mixture in a swirl on the top of the pancake. 
 
 
Once the pancake starts to settle into the pancake a bit, check the first side, then flip carefully.  Cook until the pancakes are golden brown and serve hot.  Because of all the sweetness and flavor, these are delicious with just butter, but for an all-out treat, try a dollup of whipped cream!

  3. Love this idea! Definitely going to do the cinnamon swirl the next time I make pancakes, but I am going to cheat a little & make my pancake batter from a mix, lol. ;)
