Fluffy Pancakes


You know the drill, it's Saturday - also known as Pancake Day.  Here is the simplest little recipe for super fluffy, lightly sweet, and perfectly delicious pancakes...

Fluffy Pancakes

Ingredients:
1 cup whole wheat flour
1 cup all-purpose flour
4 1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
2 teaspoons sugar
1 teaspoon brown sugar
2 large eggs
2 cups milk
2 teaspoon vanilla
cooking spray

Directions:
Use a whisk to combine all the dry ingredients.  In another bowl, beat the eggs and combine the wet ingredients until well mixed.  Fold the dry mixture into the wet, and add a drop more milk, if needed.
 
Spray a griddle lightly with cooking spray - I used Pillsbury Baking Spray for the first time and thought it worked pretty well.  Pour the batter into circles for a couple minutes, then flip them over to cook on the other side.

My son adores chocolate chip pancakes, so I always make some for him with the mini chocolate chips.
 
This recipe makes a lot of pancakes, but they freeze wonderfully for quick breakfasts.
 
And now I'm going to go gobble some up while they're still hot!!
