I love potatoes. I love them mashed, baked, roasted and fried.
But peeling potatoes?
I do not love that. I do not have time for that.
(I'm starting to feel like I'm in a Dr. Seuss book...
Here's my simple and fast recipe for oven roasted potatoes - no peeling required! The only thing not to love about these potatoes, is that there are never leftovers!
Ingredients:
4-6 small red potatoes
1 teaspoon granulated garlic
1/2 teaspoon dried tarragon
Kosher salt
Black Pepper
Directions:
Preheat the oven to 425-degrees. Mist a cookie tray with cooking spray and set the tray aside.
Wash the potatoes and pat them dry. Cut into small chunks and dump them onto the tray. Spray the potatoes with the cooking spray, and sprinkle with about half of the seasonings. Toss the potatoes, give them one more light mist and sprinkle with the remaining seasonings.
Take care to arrange the potatoes so that they are not on top of one another - you want all the potatoes to have a chance to get nice and crispy o the outside! Roast for 20 minutes, then turn the potatoes over. Stick them back in the oven and roast for another 20-25 minutes until they are golden brown.
These potatoes go perfectly with just about any meal - in fact, they'd be super tasty with my Easy Oven Roasted Broccoli and Sweet & Savory Chicken!
